about the training

this training is suitable for anyone working with food with children or adults who wants to learn basic and essential food saftey skills. the course is facilitater by maxine lock, centre manager of peritia training with over 30 years experience in teaching and outdoor training. the training is awarded by ‘qualsafe’. peritia training has designed and developed this food safety course to address the food safety needs of the catering and hospitality sector but adding the additions of cooking in the open air! the aim of the day is to combine the theory of food safety with the enjoyment of cooking lunch in the outdoors developing good practice guidelines in hopefully a fun, interactive manner.

there is emphasis on the 4 cs (chilling, cooking, cleaning, contamination). monitoring controls, corrective actions and methods of reporting are examined as part of a food safety management system.

an ‘outline of the programme’ will include:

• importance of food safety in the woods incorporating haccp

• microbes – where are they “lurking”?

• illnesses linked to food and the outdoors

• hygiene control - temperature control, storage, handling, preparation, cooking, equipment ...

• personal hygiene

• food safety control – planning a haccp relevant to your practice.

a multiple - choice test will conclude at the end of the course. after successful completion candidates will receive a certificate from qualsafe and a ‘blake training’ certificate, personalising the additional outdoor food safety topics covered.

a big pot of soup (vegan) will be cooked together over the fire and servied with freshly baked bread from the wild goose bakery for everyone to eat together for lunch. hot drinks and refreshments will also be available.

the facilitators

  • maxine is the centre manager for ‘peritia training’ and also delivers many of the face to face and online courses.

    a qualified teacher and educator of over 30 years experience, maxine is a fantastic trainer and always receives great reviews from course candidates.

    maxine is passionate about the outdoors and outdoor learning and is often found exploring long distance footpaths, running ultra marathons and riding trails on her mountain bike.
